This is just my understanding of Armament haki and its various levels, and how they affected fights and the scaling associated with them.
1) Baseline armament haki/invisible coating:
This is the most basic form of armament haki, where you simple coat your body with haki as an armor. Its the most basic form and its primary application is just giving you a baseline of extra protection and being able to touch logias/resist devil fruits with no other special properties.

2) Hardening armament haki:
This is the most common visual cue we see that haki is being used since the timeskip. Its indicated by coloring the imbued body part/object black.
Its property is that the haki actively hardens and strengths the outer layer of the part/object it is applied to. As the outer layer becomes a lot harder, it improves defense and offense
To understand what this type of armament is, i feel the best example I see is Gear 4th.
Even though Luffy can still expand with armament, since his skin is a lot harder, he's able to compress the air a lot better, thus pressuring it more and also gaining more weight behind his attacks as there is simply more air. Like the difference between filling a big balloon vs filling a hard tyre. (this also applies to Gear 3). Gear 4 uses this, and further pressurizes the air by contracting the muscles, and then releases the pressuring creating a extreme spring loaded punch.
3) Emission Armament Haki:
Instead of simply coating your body or any object with haki, this form involves flowing the haki out of your body and away from it like a forcefield or a enormous pressure of pure force.
Some people might consider this form of haki to be durability bypassing, however its just a form of haki and that increases the force of your attacks significantly by adding the the force of you pushing out your haki to the force of your punch. When Luffy recalls the application of this haki, he intends to use it to destroy kaido's tough scales
This form of haki is also what causes the No-contact hits as shown by hyogoru....
... and as later recalled by Luffy as the basis behind his no-contact hits
Additionally, aCoC itself doesn't cause no-contact, as there are examples of kaido using aCoC while making contact. Examples: Ragnarok on Luffy and Kinemon with the black lightning and when he kills luffy:
The last one here is interesting because its when Luffy is distracted and is unable to focus his haki while kaido uses his attack normally and thus suddenly makes contact
In fact the only times Kaido seems to not make contact is when he's fighting luffy and luffy is defending with his own advanced emission haki which would imply that kaido doesn't know how to use Emission himself.
Ironically big mom seems to be able to use no-contact with haki against Page One meaning her mastery over it might be better than Kaido:
This form of haki is also useful for defense as it the force it generates can push back against the force of your opponents attacks (but of course if the attacking force is too great it will make contact regardless). We have seen several uses of this form of armament used as defense.

Some other examples are the Boa sisters using it against Luffy, and sentomarou's defense.
An additional feature of this haki seems to be that its is all focused into the part from where it is ejected instead of there being wastage of haki. So it seems to be a more efficient way of using your haki:
Overall this form of haki is seemingly considered a higher application of ryuo (more on this later)
4) Internal destruction Haki:
This is a form of haki Luffy learns by watching rayleigh. It basically involves taking your haki and pushing it into your opponent to do damage.
This is the form of haki that bypasses the external durability of your opponent and allows you to directly attack the more vulnerable inner organs basically doing damage from the inside out
For this form of haki, you make full contact with your body part. Since you are injecting your haki into the body of your opponent instead of making a pressure wave with it, there isn't any no-contact associated with it.
5) Ryuo:
The earlier section about Emission or Outward Armament haki is an application of Ryuo and is straightforward, however Ryuo as a whole is kind of a confusing topic and the wording used by oda isn't always super explanatory. So this part is just going over it with a little theorizing
The first time Ryuo is explained by Hyogoru:
The kanji for it is 流桜 and literally means "flowing cherry blossoms". This is a concept of haki that is centered around flow.
The most basic use for swordsmen is that they flow their haki away from their bodies and use it to coat their swords, either using it as an invisible haki, or hardening black haki. Hardening has an obvious impact on the cutting ability of swords as it would help them maintain their sharpness and be able to cut objects more easily as the sharp edge of the blade would bend and deform less on a micro level as well while cutting objects. It would also help prevent the blades from chipping or getting dull faster.
Therefore ryuo and haki flow is something that has always been used by anyone who uses weapons and it might be a step above regular coating of your body parts (even if the ultimate function is the same)
In dressrosa, we see haki "flowing" in a way when zoro coats his swords
Now where it gets a bit confusing is when they start talking about how Ryuo can let you cut when you want, where you can cut even iron, and not cut when you don't, where you can choose not to cut even paper. If this seems familiar, its the exact same wording used for when Zoro learns how to cut iron back in Alabasta:
... and demonstrates how he can not cut leaves when he wants to
(i'm using iron, because that's the actual translation, and not steel)
There are a few confusing things here- a) how does Haki stop you from cutting something and cut when you want to? Its not really explained mechanically in the manga, so here's just my attempt: Ryuo can "sheathe" your sword in haki, thus blunting its edge, and therefore you won't be able to cut anything. This is just my theory and kinda headcanon without any direct explanation from the manga. Picture for reference:

Another confusing thing- Was zoro using haki since pre-timeskip alabasta? There are a few major things that are different about how "Breath of things" was indicated back in chapter 194-195. It isn't just that zoro could cut iron/not cut leaves, but he was suddenly able to hear the "breath" of things.
He could also tell where the rocks wouldn't land and thus was able to dodge them, and also sense where his sword was. This might even seem like observation haki, however a major aspect of observation haki is that you cannot dodge things without intent (which is how luffy was able to hit Enel). So how did zoro predict where the rocks wouldn't fall?
I would say yes, atleast when it came to his iron cutting attacks. Additionally, this would also then mean that "cutting iron" or any other substance isn't related to any specific technique, but just the strength of your haki. Its not something specific like "oh I wanted to cut iron but this object is actually made of stone so I failed to cut stone because I was hearing the breath of iron". If you're using the AP to be able to cut iron you'll be able to cut paper, leaves, stone and anything below iron in hardness. Its just making your sword stronger so it can cut something harder easier
Additionally the "breath" thing seems to be inconsistent with basic observation haki, and could be some form of CoO either unexplained or can be an inconsistency with early proto-haki
